The chickpea is the Mediterranean’s version of our soybean. It is an extraordinarily versatile vegetable and the backbone of the region’s cuisine. Aladdin’s showcases it in multifarious forms, and a savvy luncher will try to consume as many forms of it as possible in one sitting. Get the hummos with anything: schwarma, grilled chicken or even falafel, which itself is another manifestation of the chickpea.
